Cobb Salade

=14pxFOR THE DRESSING:
2/3 cup extra-virgin olive oil
1/3 cup red wine vinegar
1 tbsp. fresh lemon juice
1 tbsp Dijonmustard
tsp. Worcestershire
tsp. sugar
1 clove garlic, minced
Kosher salt and freshly ground black pepper, to taste

FOR THE SALAD:
head butter/bibb lettuce, shredded
head romaine lettuce, chopped
bunch watercress, some of the stems trimmed, chopped
2 medium tomatoes, cut into " cubes
1 boneless skinless chicken breast, roasted or grilled with only salt and pepper, and cut into " cubes
1/2 avocado, cut into " cubes
Kosher salt and freshly ground black pepper, to taste 2 tbsp. minced chives

=14px1.Make the dressing: Combine the oil, vinegar, lemon juice, mustard, Worcestershire, sugar, and garlic in a bowl whisk quickly for 3-5 minutes. Season with salt and pepper. Dressing, if refrigerated and covered, will keep fresh for up to 1 week.

=14px2. Make the salad: On a large plate or in a large bowl, combine the butter and romaine lettuces along with the watercress. Arrange thetomatoes, chicken, and avocado on top of the greens in neat rows. To serve, drizzle salad with dressing, season with salt and pepper, and top with chives.=14pxAlternatively, toss everything together in a bowl.
